Rinse the red beans under cold water and soak them overnight in a large bowl. Drain and set aside.

Add the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

Stir in the soaked red beans and vegetable broth. Bring to a boil, then reduce heat to low and simmer uncovered for about 45-60 minutes or until beans are tender.

In a separate pot, cook the long-grain white rice according to package instructions. Typically, combine 1 cup of rice with 2 cups of water, bring to a boil, then cover and simmer until the rice is cooked.
