Prepare the Mahi Mahi
Preheat a skillet over medium-high heat. Coat the mahi mahi fillets with olive oil, then rub the blackening seasoning evenly on both sides. Season with salt and pepper.

Cook the Mahi Mahi
Once the skillet is hot, add the seasoned mahi mahi fillets. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest.

Prepare the Tacos
While the fish rests, warm the flour tortillas in a separate skillet or microwave until soft and pliable.

Assemble the Tacos
Flake the cooked mahi mahi into bite-sized pieces. On each tortilla, layer the blackened mahi mahi, avocado slices, shredded cabbage, pickled onions, a drizzle of chipotle sauce, and a sprinkle of cotija cheese. Top with fresh cilantro.
