Fried Chicken Club Preparation

Prepare the Chicken
In a bowl, combine the buttermilk, salt, black pepper, and cayenne pepper. Add the chicken breasts and marinate for at least 30 minutes or overnight for best results.

Make the Lemon Aioli
In a small bowl, mix the mayonnaise, lemon juice, and a pinch of salt. Set aside.

Prepare the Candied Bacon
Cook the bacon in a pan over medium heat until crispy, then sprinkle with brown sugar and allow to caramelize slightly. Remove from heat and set aside.

Dredge and Fry the Chicken
In a shallow dish, mix the flour and cornstarch. Remove the chicken from the marinade and dredge in the flour mixture, ensuring it's well coated. Heat oil in a deep pan over medium-high heat and fry the chicken for about 6-8 minutes per side or until golden brown and cooked through. Drain on paper towels.

Toast the Bread
In another pan, toast the sourdough bread slices until golden brown.

Assemble the Sandwich
Spread lemon aioli on one side of each slice of toasted bread. Add lettuce, sliced tomatoes, fried chicken, candied bacon, and top with another slice of bread.

Serve the Fried Chicken Club with fries on the side.
