Prepare the Chicken
Cut the boneless chicken thighs into bite-sized pieces. Take the jalapeños, remove the seeds, and chop them finely. In a bowl, mix the chicken with jalapeños, salt, and pepper.

Batter the Chicken
In a separate bowl, combine all-purpose flour and cornstarch. Dip each piece of chicken into the buttermilk, then coat it in the flour mixture, ensuring it is well covered.

Fry the Chicken
Heat vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the battered chicken pieces. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Coat in Go-Go Sauce
Once the chicken is drained, toss it in a bowl with the Go-Go sauce until well coated.
