Prepare the Bread
Preheat your oven to 400°F (200°C). Slice the Leidenheimer French bread into 1-inch thick pieces.

Cook the Crawfish Mixture
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add crawfish tails, diced tomatoes, salt, and black pepper. Cook for 3-5 minutes until heated through.

On a baking sheet, arrange the sliced French bread. Top each slice with the crawfish mixture and then sprinkle with shredded cheese.

Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
