In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, and Cajun seasoning. Cook until the potatoes are tender and golden brown, about 10-15 minutes, stirring occasionally.

Cook the Eggs
In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook them over medium heat until the whites are set but the yolks are still runny, about 4-5 minutes.

While the eggs are cooking, toast the sourdough bread slices until golden brown.

To serve, spoon the corned beef hash onto a plate, top with the eggs, and sprinkle with sliced green onions. Serve with toasted sourdough on the side.
