    Prepare the Corn Salsa

    In a mixing bowl, combine corn, diced red bell pepper, red onion, cilantro, and lime juice. Season with salt and pepper to taste. Set aside.

    Season the Mahi Mahi

    Rub the Mahi Mahi fillets with olive oil and evenly coat with blackening seasoning on both sides.

    Cook the Mahi Mahi

    Heat a skillet over medium-high heat. Once hot, add the seasoned Mahi Mahi fillets. Cook for about 4-5 minutes on each side or until the fish is cooked through and has a nice blackened crust.

    Prepare Grilled Pineapple

    If not already grilled, grill pineapple pieces until caramelized and slightly charred. Dice them into small pieces.

    Assemble the Dish

    Place the blackened Mahi Mahi on a plate, top with corn salsa and grilled pineapple. Sprinkle crumbled cotija cheese on top and serve with lime wedges and your choice of side.
