    Soak the red beans in water overnight. Drain and rinse before cooking.

    In a large pot over medium heat, add diced Andouille sausage and cook until browned.

    Add chopped onion and minced garlic to the pot, sautéing until they are soft.

    Stir in soaked red beans, vegetable broth, cayenne pepper, salt, and black pepper. Bring to a boil.

    Reduce heat, cover, and let simmer for about 1 to 1.5 hours, or until beans are tender.

    When the beans are tender, stir in crawfish tails and let cook for an additional 10 minutes.
