Cracker Base

    Prep and toast crackers

    Preheat your oven to 350°F (175°C). Line a small baking sheet with parchment. Arrange 12 saltine crackers in a single layer on the sheet with a small gap between them.

    Melt 2 tablespoons unsalted butter in a small saucepan or microwave until fully liquefied. Stir in 1 tablespoon honey until homogenous.

    Brush or drizzle the butter-honey mixture evenly over the surface of each cracker so each is lightly coated. Bake in the preheated oven for 6–8 minutes, until edges are golden and tops look glossy and slightly crisped. Remove and cool on a rack for 5 minutes so the topping sets.

Fixe-style Hot Sauce

    Warm the aromatics

    In a small skillet over low heat, warm 2 teaspoons neutral oil until shimmering but not smoking. Add 1 teaspoon minced garlic and cook gently for 20–30 seconds until fragrant (do not brown).

    Stir in 1 teaspoon smoked paprika, 1 teaspoon cayenne pepper and 1 teaspoon finely chopped chipotle in adobo into the oil and garlic. Cook on low for 30–45 seconds to bloom the spices, stirring constantly to prevent burning.

    Transfer the spiced oil mixture to a small bowl. Whisk in 2 teaspoons apple cider vinegar, 1 teaspoon fresh lime juice, 1 teaspoon kosher salt and 1 teaspoon brown sugar until the sugar and salt dissolve. Taste and adjust: add a touch more vinegar or lime if you want brighter acidity, or another pinch of brown sugar if too sharp.

    If using, stir in 1 tablespoon finely chopped cilantro for a fresh note. Let the sauce rest for 5 minutes so flavors meld; it can be served warm or at room temperature.

Assembly & Serving

    Arrange the warm honeyed saltines on a serving plate. Spoon a little of the Fixe-style hot sauce over each cracker (about 1/2 teaspoon per cracker) so the cracker is sauced but not soggy. For a shared plate, serve the sauce in a small bowl for dipping instead.

    Garnish with lime wedges and a light grind of black pepper to taste. Serve immediately so crackers remain crisp. Leftover sauce stores covered in the refrigerator for up to 5 days; rewarm gently before using.
