    Humanely and safely handle live crabs. Place 1 cup sea salt in 4 cups cold water to make a saline soak. Submerge live crabs for 10–15 minutes to purge sand and grit. Rinse each crab under cold running water, scrubbing the shell to remove debris. Keep crabs chilled on ice briefly while preparing the cooking liquid.

Cooking Liquid

    In a large stockpot (large enough to hold the crabs in a single layer), combine 6 cups water, 1 cup white wine (if using), 2 bay leaves, 1 tablespoon black peppercorns, 2 tablespoons Old Bay seasoning, and 1 tablespoon kosher salt. Bring the liquid to a rolling boil over high heat.

    Cooking the Crabs

    When the broth is vigorously boiling, grasp each crab from the back (avoiding claws) and place into the pot, belly-side down. Cover the pot and return to a boil. Once boiling again, reduce heat to maintain a steady simmer and cook for 12–15 minutes for 1–1.25 lb crabs: the shells will turn bright orange/red. If your pot was crowded, increase cooking time by 2–3 minutes. Do not overcook; meat becomes rubbery if cooked excessively.

    Using long tongs, transfer crabs to a large bowl or tray lined with paper towels or newspaper to drain and cool slightly for 5 minutes so they are easier to handle.

Finishing & Serving

    While crabs rest, make garlic butter: melt 6 tablespoons unsalted butter in a small saucepan over low heat. Add 4 minced garlic cloves and cook gently for 1–2 minutes until fragrant (do not brown). Stir in 2 tablespoons chopped parsley and 1 teaspoon cracked black pepper. Remove from heat and keep warm.

    If serving melted butter on the side, warm 1 cup additional butter gently or keep in a small warmed dish. Halve the lemon and cut into wedges for squeezing over crab meat.

    To serve, place crabs on a platter. Provide crab crackers or mallets and small forks for guests. Pull off the top shell by inserting thumbs at the back of the shell and lifting; remove and discard the gills (dead man’s fingers) and digestive sac. Rinse the interior lightly if needed. Break the body in half to access the meat in the chambers and use crab tools to extract meat from claws and legs.

    Drizzle the warm garlic-parsley butter over the opened crab or let diners dip pieces into the melted butter. Serve with lemon wedges, optional sides (corn on the cob or crusty bread) and extra seasoning on the side.

    Leftovers: Remove meat from shells and store in an airtight container refrigerated up to 2 days, or freeze. Use leftover meat in crab cakes, salads, or soups.
