Beef Patties

    Form and season patties

    Divide the ground chuck into two equal portions (about 8 oz each). Gently form each portion into a loose ball and then flatten into a patty about 3/4-inch thick and slightly larger than the bun (they will shrink). Do not overwork the meat. Season both sides lightly and evenly with the fine sea salt and freshly ground black pepper just before cooking.

    Cook patties

    Heat a heavy skillet or griddle over medium-high heat until very hot (about 3–5 minutes). Add neutral oil and swirl. Place patties on the hot surface and cook undisturbed for 3 minutes to develop a crust. Flip once and cook 1½–2 minutes for medium (adjust time for doneness). In the final 30–45 seconds, place a slice of American cheese on each patty and cover with a lid or tent with foil to melt the cheese. Remove patties to a warm plate and rest 1–2 minutes.

Buns & Butter

    While patties rest, split the buns and spread softened butter evenly on cut sides. Toast buttered buns on the same griddle or skillet, cut-side down, until golden and crisp, about 1–2 minutes. Remove and keep warm.

Fixe Sauce (burger sauce)

    In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, hot sauce (if using), lemon juice, and black pepper until smooth. Taste and adjust seasoning; set aside. This sauce will be used on both bun halves.

Toppings

    Quick-pickle red onion (optional)

    If using pickled onion, combine vinegar, water, and sugar in a small bowl and stir until sugar dissolves. Add thinly sliced red onion and let sit at least 5–10 minutes (longer for more flavor). Drain before assembling if excess liquid accumulates.

    Arrange the lettuce leaves, tomato slices, pickle slices, and pickled or raw red onion for assembly.

Assembly

    Spread a generous tablespoon (or to taste) of the Fixe Sauce on the bottom bun. Place a lettuce leaf on the sauce (this helps prevent sogginess). Set the cheese-topped patty on the lettuce, then add tomato slice(s), 2–3 pickle slices, and a few red onion slices. Spread sauce on the top bun and close the burger. Serve immediately.

    Repeat assembly for the second burger. Serve hot with fries or a side of your choice.
