Method
Beef Brisket Preparation
Prepare the Rub
In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, and liquid smoke to create a rub.
Season the Brisket
Rub the spice mixture all over the beef brisket. Let it sit for at least 1 hour, or preferably overnight in the refrigerator.
Rest and Slice
Remove the brisket from the heat and let it rest for 30 minutes before slicing against the grain.
Korn Fritters Preparation
Mix the Batter
In a large bowl, combine corn kernels, flour, eggs, milk, green onions, salt, and pepper. Mix until well combined.
Fry the Fritters
Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
Baked Beans Preparation
Prepare the Beans
In a saucepan, combine canned baked beans, brown sugar, mustard, and BBQ sauce. Stir well and heat over medium heat until warmed through.
Salad Preparation
Assemble the Salad
In a large bowl, toss mixed greens, cherry tomatoes, cucumber, and your choice of dressing until evenly coated.
