In a bowl, combine shrimp, olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Toss to coat the shrimp evenly. Let marinate for 15 minutes.

Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat.

Make the Coleslaw
In a large bowl, combine shredded cabbage, julienned apple, and shredded carrot. In a separate small bowl, mix together mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour dressing over the cabbage mixture and toss to coat.
Chipotle Aioli

Prepare the Aioli
In a bowl, mix together mayonnaise, minced chipotle peppers, lime juice, minced garlic, and salt. Adjust seasoning as necessary.

Make the Tortillas
In a bowl, combine sweet potato flour, water, salt, and olive oil. Mix until a dough forms. Divide the dough into small balls and roll each ball into a thin circle. Cook on a hot skillet for about 1-2 minutes on each side until lightly browned and cooked through.

To assemble, place some blackened shrimp on a tortilla, top with apple cabbage coleslaw, drizzle with chipotle aioli, and sprinkle with crumbled queso fresco and chopped cilantro.
