Preparation

    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Pat the steaks dry with paper towels. Rub both sides liberally with salt and black pepper.

Cooking

    Heat the Pan

    In a large skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Carefully place the steaks in the hot pan. Cook for about 4-5 minutes on one side without moving them to develop a nice crust.

    Flip and Add Flavor

    Flip the steaks and if using, add garlic cloves, rosemary, and butter to the pan. Cook for an additional 4-5 minutes for medium-rare, basting with melted butter.

    Check Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should be 130-135°F (54-57°C). Adjust cooking time as necessary for desired doneness.

Resting

    Rest the Steak

    Remove the steaks from the pan and place them on a cutting board. Tent loosely with foil and let them rest for 5-10 minutes.

Serving

    Slice and Serve

    Slice the steak against the grain and serve on a plate. Drizzle with any leftover pan juices if desired.
