Crust Preparation

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix the Crust Ingredients

    In a medium bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter. Mix until the crumbs are well coated with butter.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it's even and compact.

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and let cool while preparing the filling.

Filling Preparation

    Beat the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

    Add Sugar and Mix

    Gradually add 1.25 cups of granulated sugar to the cream cheese and continue to beat until well combined.

    Incorporate Sour Cream and Vanilla

    Add 1 cup of sour cream and 1 tsp of vanilla extract to the mixture, beating until smooth.

    Add Eggs

    Add the large eggs one at a time, mixing on low speed until just incorporated. Avoid overmixing.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled graham cracker crust in the springform pan.

    Bake the Cheesecake

    Bake in the preheated oven for 55-70 minutes or until the center is set but slightly jiggly. The edges should be firm.

    Cool and Chill

    Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then remove and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
