Pasta

Lobster and Sauce

Method

Cooking the Pasta

  1. 1

    Boil the Linguine

In a large pot, bring water to a boil. Add 1 tablespoon of salt, and then add the linguine. Cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the linguine and set aside.

Making the Sauce

  1. 2

    Prepare the Lobster Sauce

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

  2. 3

    Deglaze with White Wine

Pour in the white wine, scraping the bottom of the skillet to release any stuck bits. Allow the wine to simmer for about 2-3 minutes until reduced by half.

  3. 4

    Add Cream and Seasonings

Stir in the heavy cream and season with salt and black pepper. Let the sauce simmer for another 2 minutes until slightly thickened.

  4. 5

    Add Lobster

Gently fold in the fresh lobster meat and cook for an additional 2-3 minutes until the lobster is heated through.

Combining and Serving

  1. 6

    Combine Pasta and Sauce

Add the drained linguine to the skillet with the lobster sauce. Toss everything together, adding reserved pasta water a little at a time to reach desired sauce consistency.

  2. 7

    Garnish and Serve

Remove from heat, garnish with chopped parsley, and serve immediately.
