Spicy Marinara Sauce

Preparing the Calamari

Cleaning the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, and peel off the skin. Cut the body into rings about 1/2 inch thick.

Coating the Calamari
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Toss the calamari rings in the mixture until evenly coated.
Frying the Calamari

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Frying the Calamari
Carefully add the coated calamari rings to the hot oil in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Cooking the Sauce
Add the crushed tomatoes, red pepper flakes, dried oregano, salt, and sugar to the saucepan. Stir well and let simmer for about 10 minutes. Stir in the chopped fresh basil before serving.

Serve the fried calamari hot with the spicy marinara sauce on the side for dipping.
