Filet Mignon Preparation

    Season the Filet

    Sprinkle the filet mignon with salt and black pepper on both sides. Allow it to sit at room temperature for about 30 minutes.

    Sear the Filet

    In a skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Add Aromatics

    During the last minute of cooking, add crushed garlic cloves and fresh rosemary to the skillet. Baste the filet with the oil and aromatics.

    Rest the Meat

    Remove the filet mignon from the skillet and let it rest for 5-10 minutes before slicing.

    Boil Potatoes

    Peel and chop the russet potatoes into quarters. Place them in a large pot of salted water, bring to a boil, and cook until tender, about 15-20 minutes.

    Prepare Garlic

    While the potatoes are boiling, peel and mince the garlic cloves. In a small saucepan, melt 2 tablespoons of butter over low heat and sauté the garlic until fragrant, about 2-3 minutes.

    Mash Potatoes

    Once the potatoes are cooked, drain them and return them to the pot. Add the sautéed garlic, remaining butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Serve

    Serve the garlic mashed potatoes alongside the sliced filet mignon. Enjoy!
