Preparation
- 1
Prepare the Lobster
Bring a large pot of salted water to a rolling boil. Add the lobster and cook for about 8-10 minutes until fully cooked. Remove the lobster and place it in an ice bath to stop the cooking process. Once cooled, remove the meat from the shell and cut into bite-sized pieces.
- 2
Cook the Jumbo Shrimp
In the same pot of boiling water, add the jumbo shrimp and cook for 3-4 minutes until they turn pink and opaque. Remove and place in an ice bath to cool. Peel and devein the shrimp, leaving the tails on for presentation.
- 3
Shuck the Oysters
Carefully shuck the Duxbury oysters, discarding the top shell and keeping the oyster in the bottom shell. Ensure to keep the oyster liquor intact for flavor.
- 4
Prepare the Salmon Tartare
Finely dice the salmon and mix with a pinch of salt, a squeeze of lemon juice, and any preferred herbs (like dill or chives). Chill in the refrigerator until ready to serve.
Assembly
- 5
Assemble the Seafood Tower
On a large serving platter or a tiered serving stand, start by placing the shucked oysters on the bottom layer. Next, arrange the lobster pieces and shrimp around the oysters. In the center or on a separate tier, add a small bowl of salmon tartare. Place small bowls of drawn butter and cocktail sauce on the side for dipping.
