    Prep the Ingredients

    Chop the onion, celery, and garlic. Dice the potatoes into small cubes. If using fresh clams, clean and chop them into small pieces.

    Cook the Bacon

    In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the fat in the pot.

    Sauté Vegetables

    In the same pot with the bacon fat, add the chopped onion and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute.

    Add Potatoes and Broth

    Stir in the diced potatoes, thyme, bay leaves, salt, and black pepper. Pour in the chicken or vegetable broth and bring to a boil.

    Simmer

    Once boiling, reduce heat to low and let simmer for about 15 minutes, or until the potatoes are tender.

    Add Clams and Cream

    Add the clams and heavy cream to the pot. Stir gently and cook for an additional 5 minutes until heated through.

    Remove bay leaves. Stir in the cooked bacon and adjust seasoning with more salt and pepper if needed.
