Chocolate Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

Beat the Eggs
In a mixing bowl, separate the egg yolks from the egg whites. Add the granulated sugar to the egg yolks and whisk until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

Whip the Egg Whites
In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture until no white streaks remain.

Incorporate the Cream
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined and fluffy.

Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until soft peaks form.

Serve
Once the mousse is set, top each serving with the whipped cream. Optionally, garnish with chocolate shavings or fresh berries before serving.
