    Prepare the Scallops

    Rinse the scallops under cold water and pat them dry with a paper towel. Season both sides with salt and black pepper to taste.

    Wrap the Scallops

    Cut each slice of double smoked bacon in half. Wrap each scallop with half a slice of bacon, ensuring the bacon overlaps slightly. Secure with a toothpick if necessary.

Cooking

    Preheat the Oven

    Preheat your oven to 400°F (200°C). You can also prepare a skillet on medium-high heat if you prefer pan-searing.

    Sear the Scallops

    In a skillet, heat olive oil over medium-high heat. Add the bacon-wrapped scallops and sear for about 2-3 minutes on each side until the bacon is crispy.

    Bake the Scallops

    Transfer the seared scallops to a baking sheet. Drizzle the NH pure maple syrup over the scallops and place them in the preheated oven. Bake for 8-10 minutes or until the scallops are opaque and cooked through.

    Remove from the oven and let them cool for a minute. Carefully remove the toothpicks if used. Serve warm, drizzled with additional maple syrup if desired.
