Cook the Arborio Rice
In a medium-sized pot, combine Arborio rice, water, and salt. Bring to a boil, then reduce heat to low and cover. Cook for about 18-20 minutes or until rice is tender and water is absorbed. Remove from heat and let cool.
Bolognese Sauce

Prepare the Bolognese Sauce
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, cook until browned. Stir in tomato sauce, season with salt and black pepper. Let simmer for 15 minutes, then remove from heat.

Make the Cheese Mixture
In a bowl, combine the cooked Arborio rice, mozzarella cheese, Parmesan cheese, ricotta cheese, and chopped fresh basil. Mix well to combine.
Forming Arancini

Assemble the Arancini
Take a small amount of the cheese mixture and flatten it in your hand. Place a teaspoon of Bolognese sauce in the center, then fold the rice over the sauce to form a ball. Repeat with remaining mixture and sauce.

Coat and Fry the Arancini
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each ball in flour, dip in egg, and coat with breadcrumbs. In a deep frying pan, heat vegetable oil over medium-high heat. Fry the arancini in batches until golden brown, about 4-5 minutes. Drain on paper towels.
