    Prepare potatoes

    Wash and peel the russet potatoes (peeling optional). Cut into 3/4-inch dice so pieces are roughly uniform. Place diced potatoes in a bowl of cold water for 5–10 minutes to remove excess starch, then drain and pat very dry with a clean kitchen towel or paper towels.

    Prep vegetables

    While potatoes soak, peel and dice the yellow onion to equal roughly 1/2 cup. Core, seed, and dice the green bell pepper to 1/2 cup. Mince the garlic finely and set aside.

    Heat pan

    Place a large skillet (preferably cast-iron) over medium-high heat. Add 2 tablespoons vegetable oil and 1 tablespoon butter. Heat until butter finishes foaming and oil shimmers, about 1–2 minutes.

    Brown potatoes

    Add the dried potato cubes in a single layer as much as possible (work in two batches if needed). Let potatoes cook undisturbed for 4–5 minutes to develop a golden crust. Using a spatula, flip and stir occasionally, cooking another 6–8 minutes until most surfaces are golden and potatoes are tender when pierced with a fork.

    Add aromatics & season

    Push potatoes to one side of the pan. Add the diced onion and bell pepper to the cleared space with a small pinch of salt and cook 3–4 minutes until softened and beginning to brown. Stir in minced garlic and cook 30–45 seconds until fragrant. Combine with potatoes and sprinkle with 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1/2 teaspoon smoked paprika. Taste and adjust seasoning.

    Finish and garnish

    Turn heat to low, fold in chopped fresh parsley (1 tablespoon). If using, stir in crispy bacon pieces and 1 teaspoon hot sauce for brightness. Cook 1 minute to warm everything through, then remove from heat. Serve immediately.
