Dice and Season Chicken

Cut the chicken breast into roughly 1/2-inch dice (should yield about 1 cup diced). Place in a bowl and season with salt, black pepper, and garlic powder. Toss to coat evenly.

Grill or Sear Chicken

Heat a grill pan or skillet over medium-high heat and brush with 1 tsp oil. Add the diced chicken in a single layer and cook 4–6 minutes, stirring occasionally, until pieces are browned and cooked through (internal temp 165°F / 74°C). Remove from heat and let rest 2 minutes.

Toss with BBQ Sauce

Place the cooked diced chicken in a bowl and add 1/2 cup barbecue sauce. Toss until all pieces are lightly coated. Reserve a tablespoon of sauce for drizzling on the finished pizza if desired.

Preheat Oven

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil it.

Prepare Dough

On a lightly floured surface, stretch or roll the pizza dough into a roughly 12-inch round (or desired shape) about 1/4-inch thick. Transfer to a piece of parchment paper or the prepared baking sheet. Brush the outer 1/2-inch of the crust lightly with 1 tablespoon olive oil to encourage browning.

Sauce the Crust

Spread a thin, even layer of the remaining barbecue sauce over the dough, leaving the oiled rim bare. Aim for about 1/3 to 1/2 cup of sauce depending on preference; avoid over-saucing which can make the crust soggy.

Add Cheese and Toppings

Evenly sprinkle 1 1/2 cups shredded mozzarella over the sauced crust. Distribute the BBQ-coated diced chicken pieces over the cheese. Thinly slice half a red onion and scatter the slices across the pizza. If you like heat, sprinkle 1/4 tsp crushed red pepper.

Bake

Slide the pizza (with parchment if using) onto the preheated stone or place the baking sheet in the oven. Bake 10–12 minutes, or until the crust is golden and cheese is bubbling and beginning to brown in spots. Baking time may vary by oven and thickness of dough.

Finish & Serve

Remove pizza from oven. If reserved, drizzle the extra tablespoon of BBQ sauce over the top. Sprinkle chopped cilantro over the pizza for freshness. Let rest 2–3 minutes, slice into 6–8 pieces, and serve hot.
