Preparation

    Boil the Base

    In a large pot, bring 4 cups of water to a boil.

    Add Sweetener

    Once boiling, add 2 cups of sugar to the pot, stirring until completely dissolved.

    Add Roots

    Add 1 cup of sassafras root bark and 1 cup of sarsaparilla root to the boiling mixture.

    Flavor Addition

    If desired, add 2 cinnamon sticks and 2 pieces of star anise for additional flavor.

    Simmer

    Reduce heat and let the mixture simmer for about 30 minutes.

    Strain

    After simmering, strain the mixture through a fine mesh sieve into a clean container, discarding the solids.

    Allow the liquid to cool to room temperature.

Fermentation

    Activate Yeast

    In a small bowl, mix 1 tsp of active dry yeast with a few tablespoons of warm water (not boiling) and let it sit for about 5 minutes to activate.

    Once the liquid has cooled, add the activated yeast, 1 tsp of vanilla extract, and 1 tsp of wintergreen oil to the strained liquid. Stir well.

    Pour the mixture into clean bottles, leaving about an inch of space at the top.

    Add Carbonation Water

    Top off each bottle with 4 cups of bottled carbonation water.

    Seal the bottles tightly and let them sit at room temperature for 2 to 3 days for fermentation.
