Preparation
Preheat Oven
Preheat the oven to 400°F (200°C).
Making Potato Skins
Cool and Cut Potatoes
Once the potatoes are baked, remove them from the oven and let them cool for about 10 minutes. Carefully cut each potato in half lengthwise.
Scoop Out Flesh
Using a spoon, scoop out most of the potato flesh, leaving about 1/4 inch of potato on the skin to maintain structure.
Bake Potato Skins
Place the potato skins cut-side down on a baking sheet and bake for an additional 10-15 minutes, or until they are crispy.
Topping Potato Skins
Add Cheese and Bacon
Remove the crispy potato skins from the oven. Flip them over and fill each skin with shredded cheddar cheese and crumbled bacon.
Final Bake
Return the filled potato skins to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Garnish
Remove from the oven and top with chopped green onions. Serve hot with a side of sour cream.
