Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onions, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.
Add Potatoes and Broth
Add the diced potatoes to the pot, followed by the chicken or vegetable broth. Stir to combine.
Season the Soup
Add the thyme, bay leaf, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat to a simmer.
Blend the Soup
Remove the bay leaf. Use an immersion blender to puree the soup until smooth, or transfer it in batches to a blender. Be careful with hot liquids.
Add Cream
Once blended, return the soup to the pot if necessary, and stir in the heavy cream. Heat gently until warmed through.
