Prepare the Tartar Sauce

    Mix Ingredients

    In a bowl, combine mayonnaise, dill pickles, capers, and lemon juice. Mix well until all ingredients are evenly blended. If desired, fold in fresh dill.

Prepare the Fries

    Cut and Soak Potatoes

    Peel the russet potatoes and cut them into even-sized sticks. Soak the potato sticks in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Drain the potatoes and pat them dry with paper towels. Fry the potatoes in batches for about 5-7 minutes until golden and crisp. Remove and drain on paper towels. Season with salt immediately.

Prepare the Fish

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.

    Heat Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Batter and Fry Fish

    Dip each fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
