Method

Whisky Production Process

    Milling

    Begin by milling the barley to a coarse consistency to prepare it for mashing.

    Mashing

    Combine the milled barley with heated water in a mash tun. Stir the mixture and allow it to steep for several hours until fermentation sugars are extracted.

    Fermentation

    Transfer the mash to a fermentation vessel and add the yeast. Allow the mixture to ferment for several days, during which the sugars will convert into alcohol.

    Distillation

    After fermentation, distill the liquid in copper pot stills. The first distillation takes place in a wash still, followed by a second distillation in a spirit still to achieve a higher alcohol content.

    Transfer the distilled spirit into a combination of American oak and sherry casks. Allow it to mature for a minimum of 15 years, during which it will develop its unique flavors.
