    Prepare the ramekins

    Preheat the oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder, shaking out any excess. This helps prevent the cakes from sticking.

    Melt chocolate and butter

    In a medium microwave-safe bowl, combine the dark chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until both are completely melted and smooth. This should take about 1-2 minutes.

    Mix the batter

    In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, vanilla extract, and salt until well combined. Slowly add the melted chocolate mixture into the egg mixture, stirring continuously until smooth.

    Add flour

    Sift the all-purpose flour into the chocolate mixture, and gently fold it in using a spatula until just combined. Be careful not to overmix, as this can lead to a denser cake.

    Fill the ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full. Place them on a baking tray for easier handling.

    Bake

    Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. The tops should look slightly set.

    Serve

    Remove from the oven and let the cakes sit for 1 minute. Carefully invert each ramekin onto a plate and let it sit for a few seconds before lifting the ramekin off. Serve immediately while warm for a gooey center.
