Prepare the Bread
Preheat the oven to 350°F (175°C). Cut the stale bread into cubes and place them in a large mixing bowl.

Make the Custard Mixture
In a separate mixing bowl, whisk together the milk, heavy cream, granulated sugar, eggs, vanilla extract, ground cinnamon, and salt until well combined.

Combine Bread and Custard
Pour the custard mixture over the bread cubes, ensuring all the bread is soaked. If using, fold in the raisins or dried fruit.

Bake the Pudding
Transfer the mixture to a greased baking dish and bake in the preheated oven for 40-50 minutes, or until the pudding is set and the top is golden brown.

Cool and Serve
Remove the bread pudding from the oven and let it cool for a few minutes before serving warm.
Caramel Sauce

Make the Caramel
In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar is dissolved, then stop stirring and let it boil until it turns a deep amber color.

Remove the saucepan from heat and carefully whisk in the heavy cream and butter. Be cautious as it will bubble up. Stir until smooth.

Stir in the vanilla extract and let the caramel sauce cool slightly before drizzling over the warm bread pudding.
