Preparation
- 1
Prepare the Chicken
Season the boneless chicken thighs with salt and black pepper on both sides. Set aside.
- 2
Sauté the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.
Cooking
- 3
Cook the Chicken
In the same skillet, add the remaining tablespoon of olive oil and the remaining tablespoon of butter. Once melted and hot, add the seasoned chicken thighs. Cook for about 5-6 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and keep warm.
- 4
Make the Sauce
In the same skillet, add the minced garlic and dried thyme. Sauté for about 1 minute until fragrant. Pour in the Marsala wine and scrape any browned bits from the bottom of the skillet. Allow the wine to simmer for about 2-3 minutes to reduce slightly.
- 5
Finish the Dish
Add the chicken broth and return the sautéed mushrooms to the skillet. Stir to combine and let the sauce simmer for another 5 minutes. Return the chicken to the skillet and coat with the sauce. Cook for an additional 2-3 minutes.
- 6
Garnish and Serve
Sprinkle the chopped fresh parsley over the chicken and sauce before serving. Serve hot.
