Preparation

    Prepare the Oak Chips

    Soak the American oak chips in water for at least 24 hours to extract flavors.

    Prepare the Grains

    Crush the grains of choice lightly to expose the internal starches for better extraction.

Brewing

    Boil the Mixture

    In a large pot, bring 1 liter of water to a boil, then add the crushed grains. Stir and let it steep at 65-70°C (149-158°F) for 60 minutes.

    Add Flavorings

    After steeping, remove the grains and bring the liquid back to a boil. Add the soaked oak chips, vanilla beans, cinnamon sticks, and brown sugar. Allow to boil for 15 minutes.

    Cool the Brew

    Cool the mixture rapidly using a heat exchanger or an ice bath until it reaches about 20°C (68°F).

Fermentation

    Add Yeast

    Once cooled, transfer the mixture to a fermentation vessel. Sprinkle the yeast and nutrient over the top, then seal the vessel.

    Ferment

    Allow the mixture to ferment at a stable temperature (around 18-22°C or 65-72°F) for 1-2 weeks, or until fermentation is complete.

Bottling

    Bottle the Brew

    Once fermentation is complete, siphon the brew into clean bottles, leaving some headspace. Seal the bottles with caps.

    Carbonate

    Let the bottled brew carbonate at room temperature for 1-2 weeks before refrigerating.
