Preparation

    Prepare the Fish

    Rinse the whole branzino under cold water and pat it dry with paper towels. Make three diagonal slashes on each side of the fish to help it cook evenly.

    Season the Fish

    Drizzle olive oil over the branzino, ensuring it is well-coated. Season the inside and outside of the fish with salt and black pepper. Stuff the cavity with lemon slices and chopped parsley.

Make Dulse Butter

    Mix the Dulse Butter

    In a mixing bowl, combine softened unsalted butter, dulse flakes, minced garlic, and lemon zest. Mix until well combined and smooth. Set aside.

Prepare Fennel & Celery Pickle Breadcrumbs

    Mix the Breadcrumbs

    In a skillet over medium heat, add olive oil and heat. Once hot, add chopped fennel and celery, sautéing until softened. Add breadcrumbs, white wine vinegar, salt, and pepper, stirring to combine. Cook until the mixture is golden and crispy, about 5-7 minutes. Remove from heat.

Grill the Fish

    Grill the Branzino

    Preheat the grill to medium-high heat. Place the branzino on the grill and cook for about 6-8 minutes per side, or until the fish flakes easily with a fork. During the last few minutes of cooking, brush the fish with the dulse butter.

Serve

    Plate the Dish

    Once the fish is grilled, carefully place it on a serving platter. Top with the fennel and celery pickle breadcrumbs. Serve with additional lemon wedges and any remaining dulse butter.
