Soda Base Preparation
Grapes Preparation
Wash the fresh grapes thoroughly to remove any dirt or pesticides.
Mashing Grapes
In a large bowl, mash the grapes using a potato masher or your hands until they release their juices.
Add Yeast
Sprinkle the active dry yeast over the mixture and stir gently to combine.
Fermentation
Cover the pot with a clean cloth and let it sit at room temperature for 24 to 48 hours until bubbling starts.
Flavoring and Bottling
Strain Mixture
Once fermentation is visible, strain the mixture through a fine mesh sieve into a clean container to remove solids.
Add Lemon Zest
Stir in the fresh lemon zest for additional flavor.
Bottling
Pour the strained soda into clean bottles, leaving some space at the top for carbonation.
Carbonation
Seal the bottles tightly and let them sit at room temperature for another 24 hours to carbonate.
Chill and Serve
After carbonation, refrigerate the bottles. Serve chilled with a splash of sparkling water.
