Method
Prepare Mussels

Clean Mussels
Rinse the Hollander mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Cook Mussels
In a large pot, add the cleaned mussels, water, and salt. Cover the pot and steam over medium-high heat for about 5-7 minutes or until the mussels open. Remove from heat and discard any mussels that remain closed.
Prepare Cream Fines Herbs Sauce

Combine Ingredients
In a saucepan, combine the heavy cream, chopped parsley, chives, tarragon, dry sherry, and black pepper. Stir well to combine.

Simmer Sauce
Bring the mixture to a gentle simmer over low heat, stirring occasionally. Allow the sauce to cook for about 5-7 minutes until it thickens slightly.
Serve

Plate Mussels
Transfer the steamed mussels to a serving platter. Drizzle the cream fines herbs sauce over the mussels.
