Sourdough Spaetzle Preparation

    In a large mixing bowl, combine the all-purpose flour, sourdough starter, eggs, milk, salt, nutmeg, and black pepper. Mix until a smooth batter forms. The batter should be thick but pourable.

    Bring a large pot of salted water to a boil over high heat.

    Cooking the Spaetzle

    Using a spaetzle maker or a colander, press the batter into the boiling water. Allow the spaetzle to cook for 2-3 minutes, or until they float to the surface. Use a slotted spoon to remove them and place them in a bowl.

    In a separate bowl, mix the crème fraîche, fresh peas, Grana Padano cheese, and chopped fresh herbs together. Drizzle with olive oil and lemon juice, then season with salt and black pepper to taste.
