Smoked Almond Sauce
Prepare Rainbow Trout Fillets
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Season the Fillets
In a small bowl, combine olive oil, salt, and black pepper. Brush the mixture over both sides of the rainbow trout fillets.
3. Add Lemon
Place the fillets on a baking sheet lined with parchment paper. Lay lemon slices on top of the fillets.
Prepare Smoked Almond Sauce
5. Blend the Sauce
In a food processor, combine the smoked almonds, Greek yogurt, fresh dill, garlic clove, lemon juice, salt, and water. Blend until smooth and creamy.
6. Adjust Consistency
If the sauce is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

Place the baked rainbow trout fillets on serving plates.
8. Add Sauce
Spoon the smoked almond sauce over the trout fillets.
