Making the Cider

    Prepare the Apples

    Core and chop the Stayman Winesap apples into small pieces, leaving the skins on for added flavor.

    In a large pot, combine the chopped apples and water. Bring to a boil over medium heat, then reduce to a simmer.

    Stir in the granulated sugar, cinnamon sticks, whole cloves, and star anise. Continue to simmer for about 30-40 minutes, or until the apples are soft.
