Preparation of Ingredients

    Prep the Vegetables

    Wash and slice the zucchini into half-moons. Chop the bell peppers into bite-sized pieces. Trim the ends of the asparagus.

    Prepare Garlic

    Mince the garlic cloves finely and set aside.

    Season the Salmon

    Pat the salmon fillets dry with a paper towel. Season both sides with salt, black pepper, and dried thyme. Drizzle with lemon juice and let marinate for 10 minutes.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Salmon

    Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then flip and grill for an additional 4-6 minutes until the salmon is opaque and flakes easily with a fork.

    Grill the Vegetables

    In a large bowl, combine the zucchini, bell peppers, asparagus, olive oil, minced garlic, salt, and black pepper. Toss to coat. Place the vegetables on the grill alongside the salmon. Grill for 5-7 minutes until tender and slightly charred, turning occasionally.

Serving

    Plate the Dish

    Remove the salmon and vegetables from the grill. Plate the grilled salmon fillets alongside the grilled seasonal vegetables. Drizzle with additional lemon juice if desired.
