    Cleaning the Octopus

    Rinse the octopus under cold water and remove the beak and eyes if not already done. Use kitchen shears to trim any excess skin or suckers if desired.

    Boiling the Octopus

    In a large pot, bring enough salted water to a boil. Once boiling, add the octopus and reduce the heat to a simmer. Cook for about 45 minutes to 1 hour, or until tender. You can check tenderness by pricking the thickest part of the tentacle with a fork.

    Preparing Marinade

    In a bowl, combine olive oil, minced garlic, juice of the lemon, chopped parsley, smoked paprika, salt, and black pepper. Mix well to create the marinade.

    Marinating the Octopus

    Once the octopus is cooked and tender, remove it from the pot and let it cool slightly. Cut the octopus into smaller pieces (tentacles and head) and place them in the marinade. Let it marinate for at least 30 minutes, preferably in the fridge.

Grilling

    Prepping the Grill

    Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grilling the Octopus

    Remove the octopus from the marinade, allowing excess liquid to drip off. Place the octopus pieces on the grill. Grill for about 3-5 minutes on each side, or until grill marks appear and the octopus is slightly charred.

    Serving

    Remove the grilled octopus from the grill and let it rest for a few minutes. Serve warm, garnished with additional lemon wedges and chopped parsley.
