Grilling Cabbage

    Prepare the Cabbage

    Remove the outer leaves of the cabbage and cut it into quarters. Brush each quarter with olive oil and sprinkle with salt and black pepper.

    Grill the Cabbage

    Preheat a grill to medium-high heat. Place the cabbage quarters on the grill and cook for about 5-7 minutes on each side, or until grill marks appear and the cabbage is slightly tender. Remove from the grill and set aside.

Making Caesar Dressing

    Combine Ingredients

    In a mixing bowl, combine the Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, grated Parmesan cheese, salt, and black pepper. Whisk until smooth and creamy.

Assembling the Dish

    Top the Cabbage

    Drizzle the Caesar dressing over the grilled cabbage quarters. Sprinkle the aged goat's gouda, chopped bocarones, and breadcrumbs on top.
