Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Soak in Buttermilk
Place the calamari rings in another bowl and cover with buttermilk. Let them soak for at least 30 minutes.

Dredge Calamari
After soaking, remove the calamari from the buttermilk and allow excess to drip off. Dredge the rings in the flour mixture, ensuring they are well-coated.

Heat Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Fry the calamari in batches, without overcrowding, for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.
Spicy Aioli Preparation

Make the Aioli
In a small bowl, mix together the mayonnaise, minced garlic, sriracha sauce, lemon juice, and a pinch of salt until well combined.

Serve the crispy calamari hot with the spicy aioli on the side for dipping.
