Steak Tartare

Prepare the Beef
Finely chop the beef tenderloin using a sharp knife. Ensure it is cut into small, uniform pieces.

Mix Ingredients
In a mixing bowl, combine the chopped beef, capers (drained and chopped), finely minced shallot, Dijon mustard, Worcestershire sauce, and chopped fresh parsley.

Season
Season the mixture with salt and black pepper to taste. Mix well until all ingredients are thoroughly combined.

Plate
Transfer the tartare mixture onto a chilled plate, forming it into a neat mound. Create a small well in the center for the egg yolk.

Add Egg Yolk
Carefully place the egg yolk on top of the tartare just before serving.

Heat Oil
In a deep pot or fryer, heat the vegetable oil to 180°C (350°F).

Fry Potato Slices
Fry the potato slices in batches until they are golden brown and crispy, about 3-4 minutes per batch.

Drain Chips
Remove the chips from the oil and drain them on paper towels. Immediately season with salt and let cool slightly.

In a small bowl, mix the fried potato chips with prepared horseradish for an extra kick.
