    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler method) and stir until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

    Prepare the Egg Mixture

    Separate the egg whites and yolks into two different bowls. Whisk the egg yolks with half of the sugar (50g) until pale and creamy. Gradually mix in the melted chocolate and vanilla extract until well combined.

    Whip the Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar (50g) and continue to beat until stiff peaks form.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

    Combine Mixtures

    Gently fold the whipped cream into the chocolate mixture until just combined. Then fold in the whipped egg whites in two parts, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into individual serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.

    Once set, serve the chocolate mousse chilled. You can garnish with whipped cream, chocolate shavings, or fresh berries, if desired.
