Prepare the Olives
In a mixing bowl, add the Castelvetrano olives and crush them slightly with a fork to release some of their juices. This will help them absorb the flavors later.

To the bowl of crushed olives, add the citrus zest, caraway seeds, bay leaves, crushed garlic, salt, black peppercorns, and red pepper flakes. Mix well to ensure that the olives are evenly coated with the flavorings.

Drizzle the extra virgin olive oil over the olive mixture and stir to combine. Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Let the olives marinate in the refrigerator for at least 2 hours, preferably overnight, to allow the flavors to meld.
