In a large glass jar, combine the Aquavit, caraway seeds, fennel seeds, coriander seeds, lemon zest, and orange zest. Seal the jar tightly and let it sit in a cool, dark place for 5 days, shaking it gently every day.

While the Aquavit is infusing, soak the oak barrel chips in water for at least 2 hours. This helps to release the flavors and prevent them from burning during the aging process.

After 5 days, strain the infused Aquavit through a fine mesh sieve to remove the solids. In a clean glass container, combine the strained Aquavit with the honey and the soaked oak barrel chips.

Seal the container tightly and place it in a cool, dark place for at least 4 weeks. Shake the container gently once a week to ensure the flavors mix well.
