1. Prepare the Oysters
Preheat the oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet. If desired, retain the oyster shells for presentation.
2. Cook the Bacon
In a skillet over medium heat, cook the smoked bacon until crispy. Remove from the skillet, chop into small pieces, and set aside.
3. Make the Topping
In the same skillet, melt the butter and add minced garlic. Sauté for 1-2 minutes until fragrant. Add the red chili sauce and bacon, stirring to combine.
4. Assemble the Oysters
Spoon the chili-bacon mixture over each oyster. Top with grated Parmesan cheese and sprinkle with chopped parsley.
5. Bake
Bake the oysters in the preheated oven for about 10-12 minutes, or until the cheese is bubbly and golden.
