Nacho base

    Preheat and prepare

    Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.

    Warm refried beans

    Place refried beans in a small saucepan over low heat with 1 tsp olive oil, 1/2 tsp ground cumin, and 1/4 tsp black pepper. Stir frequently until warmed through, about 4–6 minutes. If too thick, add 1–2 tbsp water to loosen to a spreadable consistency.

    Arrange chips

    Spread the corn tortilla chips in an even single layer on the prepared baking sheet, allowing slight overlap but avoiding a thick mound so cheese can melt evenly.

    Dot with beans and corn

    Spoon warm refried beans in dollops over the chips, concentrating towards center but leaving some plain chips for texture. Scatter the sweet corn kernels evenly over the chips.

Cheese & dairy

    Add cheeses

    Evenly distribute shredded cheddar and shredded monterey jack over the chips, beans, and corn so most chips get a generous amount of cheese.

    Bake to melt

    Place the baking sheet in the preheated oven and bake 8–10 minutes, or until cheese is fully melted and bubbling. For a slightly browned top, switch to broil for 30–60 seconds while watching closely to prevent burning.

    Finish with sour cream

    Remove nachos from oven. Dollop or drizzle sour cream over the hot nachos. If you prefer a thinner drizzle, mix sour cream with 1–2 tsp lime juice before drizzling.

Pico de gallo & toppings

    Make pico de gallo

    In a bowl combine diced roma tomato, diced onion, chopped cilantro, 2 tbsp fresh lime juice, and 1 tsp salt. Stir gently to combine and taste; adjust salt or lime as desired.

    Top nachos

    Spoon the pico de gallo over the baked nachos, distributing it evenly but not covering all cheese to allow visual contrast. Scatter pickled jalapeno slices on top according to your spice preference.

    Optional final touches

    If using hot sauce, drizzle sparingly over the finished nachos. For extra flavor, sprinkle any remaining ground cumin or a pinch of black pepper over the top. Serve immediately so chips remain crisp.
